“Are These Veggies Junk, So-So, or Super?”

The following is a message from Harriet Kattenberg of Seedtime & Harvest:

Why do some vegetables and fruits taste better than others? How can we judge nutritional quality and corresponding better flavor when shopping for our families’ produce? What can we do to grow more nutrition in our own gardens? Come and learn!

Few farmers practice, much less know about the correlation of soil fertility and great tasting vegetables. In this class, I will bring you up to speed and also demonstrate how to prove scientifically which vegetable is more nutritious. Your tongue will confirm.

We have been collecting data from our veggies and those in stores for the last couple years. As we continued prepping for this class, all the while planning our fertility program for our soils, we have made some astonishing discoveries. Many are very sad. But there is also hope and promise.

Please join us for this Community Education class. There is no possible way for me to cover this much information either face to face with you at Farmers Market or in my weekly newsletter.

We will show you facts and figures in real life and also teach you how to go forward with knowledge and skill to choose the most nutritious vegetables and fruits for your family. If you are into gardening, I will also tell you how to grow better nutrition in your backyard.

In such difficult economic times, it is imperative that we retain our health, physical and mental. How?

Cedar Summit Farm Organic(!) Milk

Located near New Prague, MN, Cedar Summit Farm is a family owned and operated dairy that been in the Minar family since 1926. No chemicals have been used on their farm since 1974 and in the early 90’s they began converting their conventionally raised, registered Holstein herd to an intensive, rotationally grazed, grass based herd. Junk mail be gone!

Want to cut down on all that annoying junk mail and save some trees in the process?  Below are some quick ways in which you can do just that.  All these services are free and while they may not completely eliminate unwanted mail, it should make a difference for you and our planet. 

DirectMail.com - This is a private direct mailing firm that has taken up the task of providing a National Do Not Mail Registry since there is currently no governmental list.  They compile a list of those who sign up on their site, take those names off their own lists, and send it out to other mass mailers for removal.  While it is up to the other companies to choose whether or not to remove you from their lists, the hope is that they would want to save money by not having to send mail to those who do not want to receive it.  Here are the steps to sign up:

1. Follow this link: http://www.directmail.com/directory/mail_preference/.
2. Fill out the form at the bottom of the screen with your information and click “Continue & Submit Online.”  You will be required to provide a valid email address as you will need to click a confirmation link sent to you.
3. Select any categories of mail that you would like to receive and click continue. (If you want to get rid of all junk mail, just select the “I do not want to receive any special offers in the mail” box at the top).
4. Review your selections then click submit.
5. When you receive an email from DirectMail.com, just click the registration link and you should be all set. 

OptOutPrescreen.com - OptOutPrescreen.com is a joint venture among the Consumer Credit Reporting Companies (Equifax, Experian, Innovis, and TransUnion) that allows you to “opt-out” of receiving firm offers of credit or insurance.  This should cut down dramatically on the number of pre-approved credit card offers you receive in the mail.  Just so you know, you will be required to provide personal information (such as you social security number) in order to opt-out.  Steps for signing up:

1. Follow this link: https://www.optoutprescreen.com/opt_form.cgi .
2. Click the “Click Here to Opt-In or Opt-Out” button at the bottom of the screen.
3. Select an option: Either the electronic 5-year opt-out, or the by mail, permanent opt-out. 
4. Fill out the form on the next page and click confirm.  It honestly didn’t matter which option you chose above as they both automatically complete a 5-year form and give you the option to print off a form to mail in to opt-out permanently.
5. If you want to opt-out permanently find the “click here to print” link towards the top of the page, sign the form and mail it to the address at the top of it.

YellowpagesGoesGreen.org - This is a non-profit organization “working to educate consumers and promote the green movement to eliminate the unsolicited delivery of Yellow and White Pages books.”  Through their website you can sign-up and YellowpagesGoesGreen will send the forms to the publishers to stop receiving telephone directory books.  Like the National Do Not Mail registry, it is currently up to the individual publishers on whether or not they actually take you off their lists.  Again, the steps for signing up:

1. Follow this link: http://www.yellowpagesgoesgreen.org/stop-yellow-pages/
2. Fill out the form and click Sign Up.  You will be required to provide a valid email address as you will need to click a confirmation link sent to you.
3. When you receive an email from YellowpagesGoesGreen.org, just click the confirmation link.

Kathy’s Vegetarian Chili

Here is the recipe for today’s soup.  It will be available at noon today.

1/3 -cup olive oil
2 – cups onions
2-3 cloves garlic
1-cup celery
1–cup green or red pepper
1-cup carrots
2 -cups tomatoes (Kathy used canned)

½ teas cayenne pepper
1 T. cumin powder
¾ - t. basil
¾ - t. oregano
2 T. chili powder
2 - t. salt
½ -t. pepper

2 cups spicy tomato juice
¾ cups bulgur wheat
3 (15 oz) cans beans, drained and rinsed. Try black, kidney, pinto.

½ teas Tabasco sauce
2 T. fresh lemon juice
3 T. tomato paste
1 T. Worcestershire sauce (Kathy used a vegan version)
¼ cup white wine (can use red)

1. Chop vegetables pretty small
2. Mix dry spices
3. Saute onions, garlic, celery, pepper, carrots in oil
4. Add dry spices and sauté a few more minutes
5. Add everything else
6. Bring to boil.
7. Reduce heat, and simmer 20 minutes uncovered.

*If you refrigerate and use next day, this chili is super thick!
